The Birdseye Maple Fillet Knife sports an 8inch, hand forged blade of 80CrV2 steel. The thin grind we gave to this knife gives it exceptional flexibility for cutting those perfect fish fillets and makes the whole cutting experience effortless. We fitted this stunning blade with a handle of our blue, stabilized Birdseye Maple and trimmed it out with a fluted micarta spacer and brass fittings. One of our fine, Kydex sheaths is included.
